Cask finishing is one of the most exciting techniques in modern rum production. By taking a fully matured spirit and transferring it into a second, previously used cask, we can layer in entirely new flavour dimensions that transform the character of the rum in remarkable ways.
What is Cask Finishing?
After a rum has spent years maturing in its primary cask — whether that’s American oak bourbon barrels, tropical warehouses, or our unique South Australian continental conditions — it can be transferred into a finishing cask for a final period of maturation. This finishing period typically lasts between three months and two years, depending on the intensity of flavour we want to achieve.

Tasting the Difference
The proof, as always, is in the glass. Our Barbados PX — finished in Pedro Ximénez sherry casks — is one of the clearest examples of cask finishing done right. The underlying Barbados character of tropical fruit, floral notes, and light molasses is still fully present, but it’s now clothed in layers of dark sweetness and spice that elevate the entire experience.
Meanwhile, our Port Cask expression shows how a lighter, more elegant finishing cask can add sophistication without overwhelming the base spirit. The result is nuanced, complex, and endlessly rewarding to explore.
